Saison - Blanc, 6.5% // A collaboration with our friends at @afterthoughtbrewing, this is one of two expressions (Blanc and Rouge) exploring saison and wine in harmony. The base begins as a Saison brewed with @sugarcreekmaltco and fermented with the combined mixed cultures of both Duneyrr and Afterthought. After resting for 18+ months in stainless steel, the beer develops layers of rustic saison character with subtle funk and depth. From there, we re-fermented with Finger Lakes Riesling grapes, imparting notes of peach, mango, and delicate stone fruit. A gentle acidity lifts the profile, making it bright, refreshing, and expressive of both the grape and the mixed culture.
